Any vegan worth their weight in kale owns a Vitamix. If you don’t own one, you will. If you’re wondering what to do with all that extra money you have from selling your leather shoes and coats … buy a Vitamix. With that said, I think this recipe would work with any high-speed blender.
Peel and cut into 1 inch squares four sweet potatoes, rough cut an onion and put into pot of boiling water. Cook until potatoes are fork tender, drain and rinse. Put both into Vitamix and blend on medium, adding a small amount of water to get it going. Add 1/4 cup yellow miso, two cloves of fresh garlic, 2 inch piece of fresh ginger, dash of cumin and dash of nutmeg (you can also add a few hot pepper flakes if you want it spicy). Continue to blend on high, adding more water to desired consistency. Blend for two more minutes until the Vitamix heats up the soup. Pour into bowls and serve hot, garnish with celery leaf.

PS – Your Vitamix will also make the most “creamy” delicious cheese sauces for macaroni or for dipping with raw cashews, lemon juice, nutritional yeast, sea salt and tumeric for color. Add spiciness to taste! Enjoy!
